Coriander and Mint pulao is my favourite pulao to have in summers, first because of the fresh ingreidents which is used and the aroma of mint and coriander completely enhances the dish, also the addition of vegetables makes this healthier and one can enjoy this flavourful dish anytime and can be cooked in just 30 mins. This dish goes really well with raita, spicy mango pickle and some appalam. Try and you will make it again and again.

Ingredients to make Coriander and Mint Pulao
1- 150 gms mint leaves
2- 150 gms coriander leaves
3- 2 large onions
4- 2 large tomatoes
5- 100 gms beans roughly chopped
6- 100 gms carrots roughly chopped
7- Ginger 1 inch
8- Cumin seeds
9- Green cardamom
11- Black peppercon
12- Bay leaf
13- Green chily
14- Basmati rice 3 cups washed and soaked for 20 mins.
Method to make Coriander and Mint Pulao
1- In a mixer jar , add chopped onions, tomatoes, 2 green chillies , ginger, coriander and mint leaves. Add a dash of water and grind a fine paste.
2- Heat a pressure cooker and add 4 tsp oil and add all the whole spices
3- Add chopped carrots and beans, and cook for 2-3 mins on a medium flame.
4- Add mint and coriander paste and cook for about 5-6 mins on a medium flame.
5- Add 1/2 tsp turmeric powder , 1 tsp garam masala , 1 tsp coriander powder and salt as per taste.Cook for 5 mins
6- Add rice and give a gentle mix.
7- Add 5 cups water and pressure cook for 2 whistle and off the flame.
8- Let it depressurise naturally.
9- Serve it hot with plain curd or raita.
