An interesting and healthy pancake recipe made with sago pearls, potatoes and fresh herbs. it is loaded with all the required nutrients for a balanced meal and thus served during fasting.

Ingredients to make Sabudana Thalipeeth
1- 2 cups Sabudna
2- 4 boiled potatoes
3- Green chillies
4- Grounded peanuts 3 tsp
5- Coriander finely chopped
6- Curry leaves finely chopped
7- Sendha namak as per taste
8- 1 tsp cumin seeds
Method to make SabudhanaThalipeeth.
1- Soak 2 cups sabudana for 4-5 hours.
2- Squeeze out excess water from sabudna after 5 hours
3- Add boiled potatoes , chopped green chillies , chopped coriander leaves , cumin seeds , Sendha namak, grounded peanuts and mix it all together until nicely combined.
4- Heat a non stick pan.
5- Take out a spoonfull of sabudana mixture and place it on a butter paper , now press it with the help of a butter paper and give a poori shape.
6- Now with the help of your finger make a hole in the centre
7- Lift the sabudana along with the butter paper and flip it on the pan.
8- Add oil in the hole and and on the sides. Cook on each side for 3-4 minutes until nice and light brown.
9- Serve it with coriander and mint chutney.
