Vrat wale kaddoo aloo is an easy to make main dish that you can enjoy while fasting. Cooked on special occasions , this North Indian recipe is prepared using pumpkin , amchur powder , sendha namak and ground spices. This dish can be enjoyed with kuttu ki poori or even samak chawal.

Ingredients to make Vrat wale Kaddoo aloo
1- Kaddoo 250 gms
2- 3 small potatoes chopped
3- Ginger finely chopped
4- 2 tomato puree medium sized
5- Green chillies finely chopped
6- Cumin seeds
7- Kashmiri chilly powder
8- Garam masala
9- Coriander powder
10- Amchur powder
11- Sendha namak
12- Coriander leaves
Method to make Vrat wale Kaddoo aloo
1- Heat a kadhai and add oil to deep fry Kaddoo and Potato. Deep fry until 70 percent cooked or golden brown.
2- Heat a separate pan and add 3 tsp ghee.
3- Ads cumin seeds , finely chopped ginger and green chillies. Saute it for for 1 minute on a medium flame.
4- Add tomato puree and give a gentle stir.
5- Add sendha namak , 2 tsp kashmiri chilly powder , 1 tsp garam masala , 1 tsp coriander powder , 1/2 tsp amchur powder. Mix it all well and cook on a medium flame until all the spices are cooked well.
6- Now add 1 cup water, cover with a lid and cook until ghee is released from the tomato gravy.
7- Add fried kaddoo, potato and combine it well.
8- Cover with a lid and cook for 7-8 minutes until kaddoo and potato is cooked well.
9- Garnish it with fresh coriander leaves and ginger.
10- Serve it hot
